Restaurant Review: Molino's Mexican Cuisine

I am thrilled by the recent opening of Molino’s Mexican Cuisine, on north Waco! Mario and Mara Quiroz are back after their much-loved restaurant Frida’s closed a few years ago.

The new place is just as great, the location is better and the restaurant is very pretty. They have added a few new menu items and have improved the food presentation, but everything still tastes just delicious.

My husband and I went to visit the other day. We were greeted by a friendly server and immediately given freshly fried tortilla chips with a searingly hot habanero salsa and a zippy mild salsa. Molino’s serves about eight different salsas, including traditional roasted arbol chile, green tomatillo, and basic-but-excellent pico de gallo. If you like, they will give you a sample of all of them to choose from.

For my main dish, I ordered my old favorite, the pirata with carnitas. A pirata is sort of a cross between a quesadilla and a taco, grilled until crisp. The flour tortilla was chewy and crunchy, and stuffed with rich chunks of pork, guacamole, cheese and lettuce. I added a different salsa to each bite and each one was complimentary to the dish.

Wayne ordered street tacos with steak, on soft corn tortillas with a bit of onion and tomato, and refried beans. He said they were some of the best he has ever had.

We also shared the elote, a bowl of sautéed corn slathered in crema, lime and chile. It was so decadent and so good.

Molino’s offers both vegetarian and gluten-free friendly options, and they serve beer, but no wine yet. It is likely that you will see Mara in the kitchen, Mario working the floor, their daughter serving and their two little boys doing their homework as the rest of the family makes killer food.
